4-Ingredient Yogurt Popsicles


In Colorado, summer usually isn't much of a problem. There's rarely any humidity, it gets down to 45 degrees at night, and afternoon thunderstorms on the regular will cool off the hottest of days, which is usually 80 - 85 degrees. However, this summer has been a doozie. We're in the midst of a drought and temperatures have risen to the 100 degree range, and when your apartment doesn't have air conditioning... well. Let's just say it gets a little hot.

Actually, no, it gets wildly hot. There's no reason to pretend it's anything short of miserable on a hot summer night. Sheets get thrown on the floor when you sleep, cold showers become a habit before getting in bed... and the evaporative cooler becomes your best friend. (Really, I've audibly thanked it multiple times in the past few weeks.)

So it shouldn't be much of a surprise when I tell you I've been craving popsicles.

These were just what the doctor ordered. AND they're the easiest treats when you're short on time or don't feel like slaving away in the kitchen. The only special tool you'll need is an ice pop mold and some popsicle sticks, or you could do some mini pops with an ice tray. Either way, these are delightful little pops that really make you feel like it's summertime.... just in case you didn't need a reminder.

INGREDIENTS

Cubed strawberries, raspberries, blackberries, okay you get it any berry

Honey or Agave

Orange juice

Vanilla yogurt

DIRECTIONS

Get that ice pop mold out. Start with your cubed strawberries - spoon 1-2 tablespoons into the bottom of the mold. Add in a little honey or agave. Then slowly pour your orange juice, just enough to cover your strawberry layer. Spoon the yogurt into the mold until almost full. Repeat with remaining molds, place the top on, insert your popsicle sticks and place in the freezer. Chill overnight.

To unmold: There are a few ways to do this, but I just filled up my sink with warm water to the level of the pops, placed the mold in the water and waited a minute or two. Grab the handles, and the pops should come right out!
